About this coffee

Malus IPA uses the same method as Valle Cru but relies on a different variety: Bourbon instead of Pink Bourbon, also from DARU Farm in Mérida. In the catalogue, the profile is listed under the code MZ01.

The list of aromas is shorter than for Valle Cru: grapefruit, apple, floral notes and honey. To these come the bright acidity, silky body and lingering aftertaste that Darveris Rivas gives for the profiles of the Reserve line. If you would like to taste both coffees side by side, it is best to request the samples together.

More about the producer

Processing

The designation in the catalogue and what the method means in general.

producer’s designation
Honey, Hops Must
Honey
After pulping, part of the mucilage stays on the parchment and dries with it. The sticky, sugary mucilage stays partly or largely on the seed and dries with it. Honey is the name of the method and does not mean that bee honey is added.
Hops Must
Fermentation with a must to which, by the method’s name, hops are added. The catalogue gives no recipe. The name refers to hops and to must. The name links the method to a process liquid but gives no recipe. The product name Malus IPA does not show that beer is added.
