About this coffee

The second number in the Tradicional line puts a single variety at its centre. Monte Claro grows on Darveris Rivas’s DARU Farm, at 2,020 metres as he states, and is washed processed. The same variety appears as Monteclaro Natural in the Exotic line, with an entirely different process.

Fruit leads the profile, followed by brown sugar, walnut, floral notes and stone fruit. A bright acidity, a silky body and a lingering aftertaste give the coffee structure. We ask the producer for samples and current availability on your behalf.

Washed
Pulp and mucilage are removed before drying. The cherries are pulped, the mucilage is removed, and the coffee is washed and dried. The mucilage can be removed by fermentation or mechanically. “Washed” alone does not state a fermentation time.
