    Before harvest, our team visits farms to select the best parcels, assessing microclimate, soil and history.

    Fermentation

    Fermentation shapes the coffee’s character. We monitor each lot to develop optimal flavour profiles.

    Drying

    Controlled drying using traditional methods helps reach ideal moisture and avoid off-flavours.

    Sorting

    In the final stage, beans are carefully hand-sorted so only the highest standard reaches your cup.
